Cooking meat slowly at lower temperature can toughen protien causing meat to be hard and dry. Allow us to recommend the most tender cuts coming from muscles that get little excercise. When you are cooking less tender cuts, we recommend marinating the meat. |

Seasoning mixes to flavour your Tannadice meat for a tasty dinner.
Blend mix with 2 tbsp
(25ml) of vegatable oil and spread over about 1 lb of steak, pork chops or other
cuts.

1 tbsp (15ml)
dried basil 1/2 tsp (2ml) each of crumbled dried rosemary and garlic
powder 1/4 tsp (1ml) each salt and pepper

2tsp (10ml) dried oregano 1 tsp (5ml) dried mint 1/2 tsp (2ml) cinnamon and 1/4 tsp (1ml) each of salt and pepper.

2tbsp (25ml) liquid honey 2tsp (10ml) soy sauce 1 tsp (5ml) ginger and dash hot pepper sauce.

Santa Fee Pork Chops
4 pork loin chops
(about 3 oz/100g each)
1 tsp. dried oregano
(5ml)
1/2 tsp. ground cumin
(2ml)
2 tsp. vegetable oil
(10ml)
1 clove garlic, minced
1 cup mild chunky
salsa (250ml)
1/2 cup pineapple
chunks (125ml)
Combine oregano and cumin; rub chops with spice mixture. Heat oil in a non-stick pan over medium-high heat.Add chops and brown on both sides. Reduce heat to medium-low; add remaining ingredients.
Simmer 8 to 10 minutes

1 lb hot italian sausage,fried and cut up
2-14oz cans kidney beans
1-15 oz cans tomatoes
2-3 cups tomato or vegetable juice
1 cup whole kernel corn
1 large onion, chopped
1 stalk celery, chopped
2 tsp. chicken soup powder or 2 boullion cubes
1 bay leaf
1/2 tsp garlic powder
1 tsp each thyme & chili powder
1-1/2 teaspoon seasoned salt
1/4 tsp pepper
Combine in a large pot and simmer for 1 hour. Remove bay leaf and seve very hot.

Roast chicken recipe
1 Tannadice Farms pasture - raised chicken
4 cloves garlic, minced
1 lemon,juice of, or 2 tbsp. lemon juice
2 tsp. coarse salt
1 tsp. pepper
½ tsp. spices, each of oregano, marjoram, basil, thyme, etc.
1 tbsp. olive oil
Mash all ingredients together - rub inside and outside chicken and bake 350 - 400 degrees until done. About 1 ½ hours for a fresh 5 lb. bird. Baste often.
